Autumn Fruit Salad with Honey Thyme Syrup

Hello my beauties! Well, today was supposed to be the day of my perfect picnic, but as Pacific Northwest weather often does, we have been surprised with our first rain of the season. So, instead I thought I would share with you one of the recipes that I will be toting along with me once I get my perfect picnic weather! Although I must admit there is something so renewing about the first rain. I feel giddy about running to get my slippers and cozy over-sized knit sweater! And y’all…I’ such a sucker…this weather just brings out the Christmas lover in me!! So I’m all snuggly writing this post to you with Charlie Brown Christmas pa rump a pum pumming in the background hehe.
Back to Fall! While at my friendly neighborhood grocer recently I spotted the most lovely grapes of the season, a deep plum-indigo hue with an intriguing matte finish. I wanted them just for their sheer beauty! I assumed they were Fall’s well-known Concord grape, but to my delight, when I got them home, there were no seeds! Must be a new variety I’ve been hearing about called the Thomcord, which mixes the best of the Concorde grape taste with the seedlessness and a bit of a mellower flavor of the Thompson grape.

So these lovelies inspired me to put together a fresh yet aromatically warm salad that captures my favorite flavors of Autumn.

The tart crispness of Courtland apples is perfect for this dish, but any of your favorite firmer apples will do.

Raw honey provides the sweetness to this syrup, along with the lemony earthiness of fresh thyme, an amazing flavor combination.


Another holiday favorite friend of honey and thyme, the clementine is the perfect addition for it’s tart acidity to balance the gooey richness of our honey. And for a surprise, the alluring warmth that only cinnamon can bring to the party! Mmm! I think I’m one of those people who believes that most things tastes better with a little spice!

And voila, with just a few chops, snips, and sprinkles you have a truly delectable and healthy salad that is quite enticing on its own, or mixed into cereal, oatmeal, on top of ice cream, you decide!

~2 medium firm apples, chopped (I used Courtland apples)
~1 bunch seedless grapes (I used Thomcord grapes)
~1 cup walnut pieces
Syrup Ingredients:~1/2 cup clementine or orange juice (you may use less if you like a thicker, stickier syrup)
~1/4 cup raw honey
~2 tsp. chopped fresh thyme
~1 tsp. cinnamon
~1/2 tsp. vanilla
Directions1. Prepare salad by mixing salad ingredients in a large bowl.
2. Combine all syrup ingredients in a mason jar, tighten lid and give it a good shake until all the ingredients are combined.
3. Spoon syrup over salad mixture adjusting for how dressed you like your salad.
